Can you believe that half of January is almost over. I feel like it was just Christmas and we were waiting for new years! This year seems like it’s got wheels. Don’t know about you but I feel like it’s moving way too fast for me.

Can’t believe it’s going to be Valentine’s Day soon and I’m way behind in sharing some of the recipe that I wanted to share with you. Well, yesterday I shared my Dark Chocolate Mousse for Two, today it’s this delicious Chocolate Fudge Cake for Two. You going to love this Chocolate Fudge Cake for two to share with your valentine. I have been making it for many years now. Back when I was away from home, living in Singapore. The only way for us to have cake was to eat out or make a mini version for me and my flat mate. So I’ve been making a few of these mini recipes for some time now and I just realized they would make perfect desserts for Valentine’s Day Celebration. Especially as Valentine Desserts for Two? Don’t you think?

Have you tired my other two valentine desserts or treats yet? Well, there is my Breakfast Yogurt Parfait for Two which is great to start the day with. Then for desserts I have Easy Chocolate Mousse for Two and Valentine Butterscotch Cake for Two and of course there is also the simple easy and always appreciated Chocolate Covered Strawberries that never fail to impress.

Let’s talk ingredients and substitutes

  • Oil – You can substitute with the same amount of butter if you wish but I find that oil keeps it more moist.
  • Cocoa Powder – I use dutch processed cocoa powder in all my recipes. A good quality chocolate and Cocoa powder will always give you the best chocolate desserts.
  • Dark Brown Sugar – The brown sugar gives it that fudge taste. If you can’t find dark brown sugar, use light brown sugar. Alternatively you can use white sugar with 1 tsp of molasses in the recipe.
  • White chocolate Chips – These add a rich chocolate taste in the center of the cake. If you serve it warm, these chips stay soft and melt in the mouth.
  • Coffee – Coffee and chocolate are always a perfect combination but you can omit the coffee.

Recipe – Valentine Chocolate Fudge Cake For Two -Desserts for Two

Tools

  • Bowl
  • Whisk
  • Spatula
  • Oven

Ingredients

For the cake

  • Canola or cooking oil – 60 ml (1/4 cup)
  • Dark Brown Sugar – 100 grams (1/2 cup)
  • Egg – 1 large
  • All Purpose Flour – 50 grams (1/3 cup)
  • Cocoa Powder – 35 grams (1/3 cup )
  • Coffee powder – 1/8 tsp
  • Baking Powder – 1/4 tsp
  • Salt – pinch (1/8 tsp)
  • Hot water – 2 tbsp
  • Vanilla – 1 tsp
  • White Chocolate chips – 2 tbsp

For the Chocolate Sauce

  • Dark Chocolate – 30 grams (3 oz)
  • Cream – 4 tbsp
  • Kahlua – 2 tbsp (optional)
  • Milk – 2 to 4 tbsp

To serve – 2 scoops Vanilla Ice cream

Method

Prepare cake batter

  • Preheat oven at 160 C / 320 F
  • Butter and flour two ramekins for baking.
  • Combine oil, sugar, egg in a bowl
  • Whisk until sugar is almost dissolved.
  • Add flour, cocoa and coffee powder, Baking powder and salt.
  • Mix to a smooth batter.
  • Add the hot water and vanilla
  • Pour some batter into the prepared ramekins
  • Place 1 tbsp white chocolate chips in the center. of each
  • Pour more batter over to cover the chips
  • Bake for about 15 to 18 mins until a skewer inserted in the center comes clean

Prepare chocolate Sauce

  • Place chocolate, cream and liquor in a microwave safe bowl
  • Melt until smooth
  • Add milk to make a sauce consistency.
  • Set aside to cool.

To serve these warm

  • This can be served warm or at room temperature.
  • To serve it warm – prepare batter and leave remekins in the fridge until dinner time.
  • Half hour before you ready to serve, place them in a preheated oven.
  • These will take about 20 to 22 minutes to bake because they were chilled.
  • When baked – let cool for 5 minutes

Serve

  • Weather you serve these hot of cold these are a treat when topped with Vanilla Ice Cream
  • and a generous drizzle of chocolate Sauce.
