Valentine Butterscotch Cake for Two – Valentine Desserts for Two

A butterscotch cake for two makes perfect valentine’s day dessert for two. This simple, easy and effortless recipe will have your valentine dessert sorted ahead of time. Serve it warm on a cold winter’s day with a scoop of ice cream or serve it cold as a hot summers day treat again with more ice cream.

Boy, do I have your Valentine’s Day Desserts or should I said treats sorted out this year? I posted some really cool quick recipes like my Breakfast Yogurt Parfait for two and my simple Chocolate Fudge Cake for two or my Easy Chocolate Mousse for two and of course there is also the simple easy and always appreciated Chocolate Covered Strawberries that never fail to impress You know what the best part of these small recipes is?

No Leftover!! Yup!

Often I’m OK with my dessert but I hate waste so when I have leftovers guess who binges? ME!! And that is often not calculated in my list of acceptable treats!! Let’s face it I don’t count calories, never have but I still do keep a close eye on that balance. Need to keep that waist I work too so hard for. After all, I want to be a positive example to my kids right?

One of my absolute favorite flavors is Butterscotch. You probably already know that because I do have a few good butterscotch recipes here – Homemade Butterscotch Sauce, Butterscotch buttercream, Butterscotch Cupcakes and I still have to share with you my ultimate Butterscotch Cake Recipe.. Coming soon, I promised.

The flavors of the muscovado sugar, butter and cream just seem to combine into this absolutely amazing combination. The molasses from the sugar has a unique flavor that’s not to be missed.

Baking in the oven or microwave?

This is one cake that I had no problem doing both methods without changing the recipe. I love this recipe so much that last winter we wanted to make it but had no free oven. I had my Lamb shoulder slow cooking and there is no way I wanted to put this is in there. So I made it in the microwave!! Was perfect! We loved it and yes we served it with ice cream and my homemade butterscotch sauces. Actually lots of butterscotch sauce. Yum!

Let’s talk ingredients and Substitutes

  • Muscovado Sugar – You want to use a good quality muscovado sugar not just any brown sugar. The depth of flavor and intense flavor from the muscovado is what gives this cake that flavor and aroma of butterscotch!!
  • Egg – I have always made this rich and flavorful. If you need to make this eggless you can substitute 2 tbsp yogurt instead of the egg.
  • Unsalted Butter – I always use soft unsalted butter so it’s easy to cream with the sugar. If can use salted too just omit salt in the recipe.
  • Fresh Cream – this adds a nice richness to the cake. If you don’t have cream, use milk or yogurt but not sour cream.

Recipe – Warm Valentine Butterscotch Cake for Two – Valentine Desserts for Two

Tools

  • Bowl and Whisk
  • Ramekins
  • Ice Cream Scoop

Ingredients

For the Cake

  • Unsalted Butter– 60 grams (1/2 stick)
  • Mascovado Sugar– 100 grams (1/2 cup)
  • Egg – 1 large
  • All Purpose Flour – 75 grams (2/3 cup)
  • Baking Powder – 1/4 tsp
  • Salt – pinch (1/8 tsp)
  • Fresh cream – 2 tbsp
  • Vanilla – 1 tsp

For Serving

  • Vanilla Ice Cream – 2 scoops
  • Caramel Sauce – homemade or store bought.

Method

  • Lightly spray two ramekins for baking.
  • Cream soft butter and sugar lightly
  • Add the egg (or yogurt) thoroughly.
  • Whisk until sugar is almost dissolved.
  • Add flour, baking powder, and salt
  • Mix to a smooth batter.
  • Add fresh cream and vanilla
  • Divide batter into two ramekins

Oven Bake

  • Bake in a preheated oven for about 15 to 18 mins until a skewer inserted in the center comes clean
  • Serve hot or cold with Vanilla Ice cream
  • Drizzle with caramel sauce.

Microwave Baking

  • Bake in the microwave at full power for 1 minute 30 seconds
  • The center should still be slightly wobbly when done.
  • Let sit for 5 minutes before you top with a scoop of Vanilla Ice Cream
  • Drizzle some caramel sauce on top
