Marzipan Easter Eggs – Naturally Eggless, GF and Vegan

A perfect treat to hand out during the season of Easter are marzipan Easter eggs. This simple, easy and effortless method to making homemade marzipan Eater eggs is full proof and enjoyable. Weather make them wholesome with vanilla or chocolate marzipan or stuff them with sweet centers these are a must have Easter treat.

As a kid this was one of my must have treats during Easter. Actually way before Easter. As I said before mom would take orders for homemade marzipan Easter eggs so she made these in plenty. I’d get to make the mini flowers with her. I’d also get to pipe the leaves some times and I’d get to use my tiny hands to add the little gold and silver dragees or beeds.

Don’t you just love memories like this from way back when you were a kid. Of course most of mine are with mom and my brother or sister because I lost my dad when I was only two years old. Never knew what I missed in a dad until I saw Ziv with our kids.

Most of my memories with mom are usually the kitchen or sewing memories. As a single mom she worked very hard by either taking orders for food items or for sewing peoples clothes. Back then sewing was not a very profitable business nor was food orders. So she had to take a LOT of orders to bring food on the table.

The bonus of these food orders was of course we always have extra food and treats such as these marzipan Easter eggs during Easter or marzipan truffles and bon bons during Christmas. Ah well, memories – love when they pop up.

Three variations – Marzipan Easter Eggs

Now I make these for my kids as Easter treats and wanted to share with you the possibilities of making these from simple to exotic. As you can see I have three different marzipan Easter eggs here (see video above)

  1. Almond or rose flavored homemade marzipan (white) & Chocolate marzipan to make the classic marzipan Easter eggs.
  2. Stuffed marzipan eggs – these can be made with plain or chocolate marzipan with a chocolate coated nut stuffed in the middle. You can also stuff a little toy as long as you tell the parent or kid not to bite into it.
  3. Chocolate coated marzipan Easter eggs – again these can be done with their marzipan recipe

Let’s talk ingredients and substitutes

  • Marzipan – you can use homemade or store bought marzipan for these eggs. Honestly? Why buy store bought marzipan when you can easily make homemade marzipan is five minutes – YES, you heard me – homemade marzipan takes 5 minutes. You can make almond marzipan or chocolate marzipan using almond meal. If you choose to make homemade almond meal add another 5 minutes but then again it’s like 10 minutes!!
  • Chocolate coated nuts – I like to use these as a little treat in between but you can omit this completely or choose something else you like. You want to make sure it’s not too bulky. Whatever you use needs to be nestled in the egg shape of the finished egg won’t lay flat.
  • Chocolate – If you know how to temper chocolate go ahead and use tempered chocolate to coat the eggs. If not use compound chocolate which means you don’t need to temper the chocolate. Compound chocolate can be found in any cake decorating store.

Egg molds

Egg molds – I am using an egg molds which I picked from India a few years ago. But you can use any egg shape mold (even plastic) which can very easily be found in any cake decorating store or check the links below. If you still don’t have these molds in time – form the marzipan eggs by hand. Roll them into a egg shape for full eggs or cut in half and reshape as necessary for half eggs.

Recipe – Marzipan Easter Eggs

Ingredients

  • Homemade Marzipan – 200 grams – (my homemade recipe here)
  • Chocolate Marzipan – 200 grams – (my homemade recipe here)

Extra for

  • Stuffed marzipan Easter eggs – Chocolate coated nuts – 10 to 12
  • Chocolate coated marzipan Easter eggs – Chocolate – 100 grams (3.5 oz) + 2 tbsp veg oil

Method

Classic marzipan Eater Eggs

  • Knead marzipan well so you have no cracks.
  • Place a piece of cling/wrap over the egg mold
  • Roll a golf size piece of marzipan into a ball then into an oval or egg shape
  • Place the ball into the egg mold with cling wrap.
  • Press down firmly to even the marzipan so you have a perfect half marzipan Easter egg.
  • Once smooth – flip the mold over
  • Remove the mold and plastic wrap.
  • You should have a smooth leveled egg half.
  • Decorate with borders and blossoms (as shown in the video)

Stuffed marzipan Easter eggs

  • Place the ball into the egg mold with cling wrap.
  • Then place a chocolate coated nut in the middle of marzipan
  • Press down firmly but gently so it’s sinks in but does not break.
  • Ensure it’s wrapped well with marzipan
  • Smooth well – use plastic wrap to help smooth
  • Flip the mold over.
  • Remove mold and plastic wrap
  • Decorate with borders and blossoms

Chocolate Coated marzipan Easter eggs

  • Melt compound chocolate or temper some chocolate in a bowl.
  • Add the veg oil so its not too thick
  • Drop the marzipan egg half in the chocolate
  • Pick with a fork and let excess drip off.
  • Gently scrape the bottom of the egg on the edge of the bowl to let excess drip
  • Place on a parchment paper or wire rack to drip excess.
  • Decorate with borders and blossoms (as shown in the video)
