Apple and Date Cake

Apple and Date Cake is a light and fluffy cake with comforting flavours and aromas of apples, dates and cinnamon. This cake is then topped with a butter and coconut broiled glaze. This cake is perfect for a morning tea snack or family gatherings.

When I originally posted this recipe in 2014 the photos were terrible and the recipe actually came about while playing a game I invented: Recipes From A Hat. This game required me to pick three random ingredients from a hat and try to make a recipe out of these ingredients without following a recipe. I picked out dates, apples and vanilla. This lead me to test different recipes and created this fluffy cake. According to my family, this was the winner!

This apple and date cake is so light and airy. Its moist and melts-in-the mouth. The flavours of the apple and cinnamon mix together with the dates and vanilla to create a sweet and comforting treat.

I can’t believe we’re already in April!! How has this happened? Easter has been and gone and Winter is on it’s way (though it doesn’t feel like it in Australia). However I’m a Kiwi girl at heart and I know how cold it will be getting in New Zealand so sometimes you just need to bring the comforts of home with the raging fire and the smells of a fresh Apple and Date Cake baking in the oven on a wet and windy day.

For The Cake;

  • 2 Granny Smith Apples, Peeled and cubed
  • 1 tsp Baking Soda
  • 1 Cup Dates, Chopped
  • 1 Cup Boiling Water
  • 100 g Butter, Softened (1/2 Cup)
  • 2/3 Cup Brown Sugar
  • 1 Large egg
  • 1 tsp Vanilla Extract
  • 1 ½ Cups Self Raising Flour

For The Glaze;

  • 60 g Butter
  • 1/3 Cup Brown Sugar
  • ½ Cup Desiccated Coconut
  • 2 Tbsp. Milk


  1. For the Cake;
  2. Preheat the oven to 180°C and grease and line a 22cm (or a large) spring form pan.
  3. Place the chopped apples and dates in a bowl with the baking soda and boiling water. Give it a small mix and set aside.
  4. Beat the butter and brown sugar together until creamy.
  5. Beat in the egg and vanilla extract.
  6. Stir in the flour and apple mixture until all is combined. The mixture should be runny.
  7. Pour into the prepared tin and cook for 30 minutes.
  8. For the Glaze;
  9. Combine the glaze ingredients in a saucepan over a medium heat until the butter has melted and the sugar has dissolved.
  10. Spread the glaze over the cake and bake for a further 10 minutes.
  11. Allow to cool and then chop.

Recipe Notes

To make this healthier, you can cut down on the sugar a little and also replace half the butter with apple sauce and the cake is still fine.
