Butterscotch has a distinct rich flavor that’s hard to resist. This simple, easy and effortless recipe makes the most decadent butterscotch cake with a moist texture and a soft crumb. The batter is flavored with butterscotch sauce, dark brown sugar and sour cream. Decorated with luxurious Swiss Meringue buttercream that just melts in the mouth and dripped with more butterscotch sauce.

I must admit I love butterscotch more than I love caramel. Yeah, I know! Often people think it’s the same and I very passionately tell them its’ not the same. Well, Butterscotch is defined by that distinct brown sugar flavor which comes from molasses. This with caramelized gives a different flavor, aroma, and taste which is different from regular caramel. Again I better stop because my friends know how passionately I can argue on this topic. But know this… if you want to be my friend? Don’t ever say caramel and butterscotch are the same.

Moving on (calmly), this is one of my absolute favorite cakes!! I just love the butterscotch flavor and I have tried and tested quite a few recipes over the years. Yes, a few from the reputed internet website. But I had to come up with my own recipe to find just that right balance of flavor, texture, and crumb. I can tell you I love this recipe. I think you will love this recipe too!

Let’s talk ingredients and substitutes

  • Butterscotch sauce – Sounds surprising but guess what? The butterscotch sauce works best to give this cake batter that butterscotch flavor. I like it better than butterscotch extract! Plus I have it on hand if I’m planning this cake anyways. Now if you don’t have the butterscotch sauce you can add golden syrup it helps give that nice butterscotch color.
  • Butterscotch extract – this is not in the ingredient list below. I usually don’t use it. I like to add the butterscotch sauce but if you choose to go with golden syrup then I highly recommend using 1/2 tsp extract to enhance the flavor. Remember extract only adds flavor not taste so if don’t have it don’t worry!
  • All-purpose flour – regular all-purpose flour works just fine in this recipe. You can use cake flour but you will need two tablespoons more in this recipe.
  • Eggs – use fresh large eggs – to me large eggs are about 60 grams each.
  • Dark brown sugar – This not just add that nice butterscotch color but also flavor. If you don’t have dark brown sugar use light brown sugar and if you still don’t have light brown sugar? Well, the easiest trick as I’ve shared with you before is – use white sugar with molasses. For every one cup white sugar add 1 tbsp molasses.
  • Sour Cream – This adds richness to the cake, keeps it moist with a tender crumb. Don’t have sour cream? make your own in five minutes. Here how – Homemade sour cream for baking

Before you begin

Below is the recipe for my butterscotch cake. The Swiss Meringue Buttercream and the Butterscotch Sauce Recipe I have already shared with you before. So make sure you print all three recipes if you plan to make this cake. You can also use my Butterscotch Buttercream Frosting or Velvet American Buttercream instead

Plan ahead how are you going to decorate the cake. Today I used cake crumbs to decorate the cake. I cut generous domes of my cake to give me some cake balls and crumbs but you can use any store bought decorations as well.

Recipe – Butterscotch Cake with Swiss Meringue Buttercream

Tools

  • Baking Pan – 8″ round or Fat Daddio’s Anodized Aluminum Round Cheesecake Pan, 6 Inches by 3 Inches6″ round
  • Mixing Bowl
  • Stand mixer or hand mixer
  • Spatula
  • Whisk

Ingredients

For the cake

  • Unsalted Butter – 170 grams (3/4 cup)
  • Dark Brown Sugar – 200 grams (1 cup)
  • Butterscotch sauce – 2 tbsp (see substitute above)
  • Eggs – 3 large
  • All-Purpose Flour – 280 grams (2 1/2 cups)
  • Baking powder – 1 1/2 Tsp
  • Baking soda – 1/2 tsp
  • Salt – 1/2 Tsp
  • Sour cream – 250 ml (1 cup)
  • Vanilla – 2 Tsp

For decorating the cake

  • Swiss meringue buttercream – 8 cups / 600 grams
  • Butterscotch Sauce – 1 cup

Method

Prepare

  • Grease and line two 8 inch baking pans or (3 six inch baking pans)
  • Preheat the oven to 170 C / 340 F
  • Sift flour with baking powder and salt.

Mix Batter

  • Whip the eggs with a whisk attachment until light and fluffy – set aside.
  • Cream the butter and sugar until light and fluffy
  • Add the vanilla, sour cream, butterscotch sauce – mix well
  • Next, add flour mixture
  • Gently combine the whipped eggs with the flour mix – First, combine 1/3 with a whisk to prevent lumps, Then fold the rest in with a spatula.

Bake

  • Pour batter into prepared baking pans
  • Bake in the preheated oven – on the center rack for 25 to 30 mins
  • Cool in the pan for 10 mins then cool on the wire rack completely before storing or decorating.

Decorate with Buttercream

  • When cooled level and cut each layer in half horizontally giving you a total of four layers.
  • Sprinkle with sugar syrup to keep the layers moist
  • Layer and frost the layers with buttercream
  • Use to remaining buttercream to pipe borders.
  • Enjoy!

  • I used the dome of the two cake layers with a little butterscotch sauce and buttercream.
  • combined it well just like a cake pop mixture.
  • Rolled it into balls
  • Chilled them a few minutes
  • Then, placed them on the cake.
