Mini Blueberry Cream Cheese Tarts Recipe

These blueberry cream cheese tarts are ready in 20 minutes and are perfect when you need to make a quick fancy dessert. This simple, easy and effortless recipe takes advantage of ready to use tart shells that cut preparation time by half and make entertaining a breeze with cream cheese and blueberry filling that just melts in the mouth.

We are now seeing a few blueberries in season here and knowing how crazy I am about berries in general, one of the first few things I made last week were these mini blueberry cream cheese tarts and some decadent blueberry cream cheese squares which I plan to share with you soon.

Blueberries can be hard to resist because they are so versatile, don’t you think? You can just have them simply in a breakfast bowl (love a good blueberry yogurt parfait) and a smoothie like my banana blueberry chia smoothie or make an exotic dessert like my Classic Blueberry Tart or Blueberry Cheesecake. No time to make dessert?

These are just the simplest, easiest and quickest dessert you can make. You know me I love desserts and I can justify hours spent to make fancy desserts, but then there are those times when you just don’t have the time or you are not in the mood to spend hours over desserts. Of course, there is summer where you can’t be bothered to stay cooped up in the kitchen. What do you do when you are invited to a BBQ party and dessert is on you? Guess what? As fancy as this looks so easy it is to make.

  • This is a semi-homemade kinda thing. You buy the tart shells readymade which is so easy to find at any grocery store.
  • Takes 3 minutes to whip the cream
  • Another 3 minutes to make the blueberry filling (yes, you can use frozen blueberries)
  • Takes 3 minutes to swirl the cream cheese mix
  • And another to add the blueberry filling and garnish

Can you think of anything more simpler? Not to mention it looks like you spent hours making it from scratch. Right?

Let’s talk ingredients and substitutes

  • Pastry tart shells – these are very easy to find in almost any supermarket these days and you can find these in eggless, gluten free as well as vegan options these days. So look for one that suits your diet. If you want to make these home I have a wonderfully detailed recipe for shortcrust pastry, that you can uses. Instead of making a large tart make them in mini tarts
  • Whipping cream – I highly recommend using 35% fat whipping cream. The low-fat versions will have too much liquid and end up soaking in the tart. If you plan to use a low-fat version I would recommend assembling them closer to serving rather than ahead of time
  • Caster sugar – you really need a fine grain sugar that will dissolve in the whipped cream if you don’t have fine grain use 2 tbsp fo confectioners sugar/powdered sugar
  • Vanilla pudding – adds the flavor of course, but also stabilizes the whipped cream
  • Cream cheese – again do not use low fat. The liquid in low fat will make the tarts soft.
  • Blueberry filling – It takes no more than 3 minutes to make the blueberry filling but if you still want to buy store bought yes you can use a can of blueberry filling too!

Recipe – Mini Blueberry Cream Cheese Tarts

Ingredients

  • Shortcrust Pastry Tarts – 24 mini tart shells
  • Whipping cream – 120 ml (1/2 cup)
  • Caster sugar – 1 tbsp
  • Vanilla Pudding Mix – 1 tbsp
  • Cream Cheese – 113 grams (1/2 cup)
  • Blueberry Filling – 1/2 cup (120 ml)

Method

Make Ahead in no particular order

  • Buy ready to use tart shells or make homemade mini tart shells using my shortcrust pastry recipe
  • Also, prepare a half recipe of the blueberry filling as detailed in my post

For the Cream Cheese Mixture

  • Whip cream with sugar and vanilla pudding mix
  • Add cream cheese and whip to combine well.
  • Set aside until ready to use.

Assemble the Tarts

  • Transfer cream cheese mixture to a piping bag with a star tip
  • Pie a swirls into each tart shells leaving a gap in the middle for the blueberry filling.
  • Using a spoon gently fill the gaps in the center with blueberry filling
  • Garnish with fresh blueberries
  • Enjoy!
