Banana and Prune Muffins 香蕉西梅玛芬

Our breakfast of freshly baked delicious banana and prune muffins can be made within a few minutes by using an electric mixer. This is a simple healthy bake with little butter but more of over ripe bananas. You can never go wrong with very ripe bananas to bake these fragrant, soft, yummy and a little dense muffins, more so with some pitted prunes thrown in. If you like these small cakes to be a little nutty, just add in some chopped walnuts.

  • 240 g self-raising flour
  • 100 g soft butter
  • 140 g muscovado sugar or brown sugar
  • 1 lemon zest
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 large eggs
  • 350 g overly ripe banana mashed
  • 100 g dried pitted prunes or dried cranberries

  • 1 tbsp lemon juice

  • 350 g overly ripe banana mashed
  • 100 g dried pitted prunes or dried cranberries

Instructions

  1. Preheat oven to 180 deg C. Place cupcake liners in muffin pan and set aside.
  2. Sift flour into a large bowl, add butter, sugar, lemon zest, lemon juice, vanilla extract and eggs. Beat with electric mixer on low speed until ingredients are combined. Then increase speed to medium, beat mixture until smooth. Stir in banana and mix well. Lastly add in in prunes and fold well with a rubber spatula.
  3. Scoop banana mixture into muffin pan to 3/4 full and bake in preheated oven for about 25 minutes or test with a skewer till it comes out clean.

用熟透的香蕉烘烤蛋糕,肯定不会错!香氣十足再加上西梅,玛芬考出来真的很赞!

材料:可做约20个

  • 240克 自发面粉
  • 100克 软牛油
  • 140克 原蔗黑糖或赤砂糖
  • 1粒 柠檬皮屑
  • 1汤匙 柠檬汁
  • 1茶匙 香草香精
  • 2个 大鸡蛋
  • 350克 熟透香蕉泥
  • 100克 西莓,切小 (用蔓越莓干也可以) 喜欢的话也可以加入少许核桃碎

做法:

  1. 预热烤箱摄氏180度。玛芬盘内放上纸杯, 备用。
  2. 将自发面粉过筛入大碗中,加入牛油,糖,柠檬皮屑, 柠檬汁,香草香精和鸡蛋。用电动打蛋器低速度将材料搅匀。然后转换中速度将面糊打至光滑后,倒入香蕉泥再混合均匀,最后加入西莓, 用橡皮刮刀翻拌均匀即可。
  3. 将面糊平均舀入纸杯内3/4满。送入预热烤箱烤约25分钟 或竹签扎入蛋糕内部不沾糊就可以了 。

  • 烤箱温度和烘烤时间务必根据自家烤箱来定
